Our story

Home-baked, one loaf at a time.

Hi, I'm Bri! A Colorado native who moved to Frederick in 2021 and the baker behind Bollinger Breads. This all started as a home kitchen experiment for my family when we started reading ingredient labels of store bought breads. The sourdough starter I received from a lovely neighbor was originally intended for my husband, but I quickly fell in love with sourdough and took it over. Over the last few years this has grown into a weekly small-batch bakery with opportunities to participate in local markets thanks to community support!

I still mix, shape, and bake every loaf by hand, using a slow sourdough fermentation instead of commercial yeast — simple ingredients, real time, real flavor.

Because everything is made to order in small batches, quantities are limited each week. Ordering ahead is the best way to make sure your favorite flavor doesn't sell out.

Keep it fresh

Sourdough care instructions

  • 01Stays freshest for 3–5 days at room temperature, or up to 6 months frozen.
  • 02Store in its original packaging, or wrap in parchment and place in a storage bag.
  • 03Won't finish it in 5 days? Freeze it — slicing before freezing makes for easy grab-and-go pieces.
  • 04To refresh: mist with water and warm in a 350°F oven for 5–10 minutes. Works great straight from frozen, too.
  • 05Slicing a boule? Cut the loaf in half first and rest it cut-side down before slicing — it keeps the loaf from squishing.
